One of our favourite humans/chefs to grace the String + Salt Kitchen, Mauro Callegari Chef Patron of The Independent Gembrook, always delights with his generous and inspired food, his magnanimous philosophy and, I’m not going to lie, his swoon worthy accent.

Argentinian born, Mauro cooked his way around the globe before coming to settle in the leafy hills of Gembrook where he established his stunning restaurant and bar;  The Independent in 2014.  Mauro’s honed his passion for cooking early on in the Buenos Aires suburb of La Paternal under the watchful eye of his mother in the Callegari family restaurant. 

The Independent’s menu reflects Mauro’s Argentinian, and Spanish heritage and combines it with the best local and seasonal produce Mauro can find.
