One of our favourite humans/chefs to grace the String + Salt Kitchen, Mauro Callegari always delights with his generous and inspired food, his magnanimous philosophy and, I’m not going to lie, his dead sexy accent.

Born in Argentina to a Spanish mother/father, Mauro cooked his way around the globe before settling in the leafy hills of Gembrook where he established his ode to perfect casual dining, The Independent in 2014.   

As Chef Patron of the Independent Mauro’s Spanish heritage is evident at every turn. From his focus on utilising seasonal produce and nose to tail cooking, to the ubiquitous house Sangria and shared tapas menu, Spanish traditions and flavours play a huge role in the dining experience.

In this class Mauro will be sharing some of the hearty Spanish peasant fare he is so passionate about. In this hands on experience learn to prepare authentic pan con tomate (tomato bread), pulpo a la gallega (Galician style octopus), albondiagas de chorizo (chorizo meatballs) with arroz caldoso (wet rice) adn silky crema Catalan to finish.

All of our weekend feasts conclude with a shared meal around the String + Salt table, some good wine and conversation. Mauro's classes really are such a treat and would make a wonderful gift for te wanderlust foodie in your life.
