Chef Mauro Callegari travelled the world before coming to rest at The Independent, Gembrook. Born in Argentina, Mauro’s kitchen skills developed early under the watchful eye of his mother in the Callegari family restaurant, in the Buenos Aires suburb of La Paternal (notable for being home to Maradona’s first professional team).
Settling in Melbourne, Mauro worked with some of the city's finest chefs, before joining forces with the Gordon family (of Robert Gordon Pottery) to open The Independent in late 2014.
Mauro is excited about vegan cooking using local seasonal produce, offering popular monthly vegan feasts at the The Independent. In this class you will explore boldly flavoured vegan cooking, influenced by Spanish and Argentinian flavours.
Mauro will show you how to add flavour and fun to vegetables and other ingredients, creating meat free dishes that will please even the most sworn meat lover.
