As a teenager, an obsession with food combined with juggling crippling gut health issues lead Melanie to pursue a career as a chef with a focus on nourishing and healing foods. 

Mel’s chef career has mostly centred around whole foods and health with a recent detour into the food truck industry giving her a great insight into current food trends and building flavour.  Her resume has included stints as head chef at vegetarian establishment Monk Bodhi Dharma, My Goodness Organics and Pressed Juices. 

She recently launched her own business Mettle + Grace offering one-on-one personalised meal planning and cooking classes especially aimed at individuals with allergies, intolerances and food restrictions.  

In this class Mel will share lots of delicious recipes for main meals, snacks and desserts all designed to nourish, heal and energise your body and mind while avoiding common bowel irritants known as FODMAPS  or Fermentable Oligosaccharides, Disaccharides, Monosaccharides and Polyols. 

Using whole and unprocessed seasonal foods full of nutrients, Mel’s recipes are rich in healthy natural fats and oils and gut healing pre- and probiotic foods. 

Mel loves to show her students how to utilise fresh herbs and spices to add flavour and colour to recipes without adding garlic and onions or using processed sauces, condiments and fructose based sweeteners. 

This is a great class for anyone who has diagnosed Fructose Malabsorbtion, IBS or has been recommended to reduce their FODMAP intake. It is also a great class for those just wanting to incorporate more nourishing foods into their daily eating 

Mel will guide you through creating tasty and healthful dips and salsas to snack on, creating flavour in soups and mains without onion and garlic, and tasty low fructose desserts. Full menu TBA
