Peter, a passionate Melbourne-based foodie, released his first book, A Charcuterie Diary, in 2017 - the first Australian book written solely about home charcuterie production. His second book, Feathered is devoted to poultry cooking in all forms including chicken and game birds, covering technical aspects of eggs, poultry and butchery as well as many different cooking styles such as sous vide, smoking and confit.
An avid poultry cook, Peter wrote this book following the recipes which he had made many times with some observations on the nature of the poultry and eggs.
We are excited to welcome Peter to the S&S Kitchen to share his knowledge and passion for poultry including selecting the right birds; de-boning, cuts and pieces; cooking game birds; and simple tips for the best chicken recipes.
