Brian’s culinary journey career has taken him to many places across the world and he has experienced various aspects of the industry. He has lived and worked in the UK for two years, successfully held the position as chef manager on oil rigs for seven years. Not only was he one of four head chefs at the MCG as well the Vine Hotel in Richmond, which won the Herald Sun ‘Hotel of the Year’ award at the time, but he also worked for an exclusive catering business in Brighton and also was the proud owner of the Food Depot Café in Warragul.. Over the last 12 months he has been working with the Big Spoon Group at The Court House in Warragul while also leading the kitchen at busy Lardner Park functions.

He has always loved the flavours of Middle Eastern cuisine, the sharpness of coriander, enticing scents of saffron and star anis and the sweetness of honey and rosewater. He has had the privilege of working with and gaining experience from award winning chef Greg Malouf.
