One of Gippsland's most celebrated chefs, Lewis Prince was the inaugural executive chef at esteemed Traralgon fine-dining establishment, Neilsons Kitchen.  Lewis helped guide the restaurant to becoming Latrobe Valley's first restaurant to awarded a Chef's Hat in The Age Good Food Guide ,  which described him as a "magic chef" and "on top of his game.

Since then he has also founded Little Prince Eating House and Bar serving wonderfully fresh and flavourful Asian and modern Australian inspired tapas. One thing Little Prince does exceptionally well is fish and seafood which feature highly on the expansive menu..

While seafood can be intimidating, Lewis will teach you how to confidently clean prepare and season your seafood dishes including shellfish like oysters and mussels and prawns, how to fillet and cook small and large fish as well on sharing his tips for what to look for when buying seafood.

This hands on class will include a menu of soft shell crab, with homemade brioche buns, ssucculent prawn dumplings in fragrant seafood stock, seared tuna and avocado salad, salt cured salmon and beetroot pickle.
