Taking influence from Norway to Portugal, Japan to the beaches of the Mornington Peninsula, Michael's food defies boundaries and is always prepared with exceptional respect and technique.

Michael is passionate about combining sometimes unusual ingredients to bring out the best in whatever produce he is working with. In this class you'll learn some wonderful seasonings and accompaniments to pair with different kinds of game birds. 

Michael will guide you through his favourite cooking techniques to enhance the flavour and qualities of game bird meat. 

Part of Michael’s talent is his beautiful use of flavour and natural elements. Foraged herbs, flowers, native spices, house-made spice blends and powders, flavourful sauces  and infused oils and vinegars all feature on Michaels menus.  So not only will you learn to prepare game meat but gain inspiration for dressing and seasoning all kinds of foods.
