When Nicole was doing her apprenticeship, learning the foundations of cooking, she hated the way chefs would tell her how they wanted something done but never why. A lot of times she had to learn the hard way, but now you can benefit from all Nicoles trial and error, and years of perfecting her cooking techniques as he shows you how to:

  • Cook a steak to desired doneness

  • Fillet and panfry a fish

  • Roast a perfectly cooked chicken and make a pan sauce

  • Make a mayonnaise

  • Poach an egg to desired doneness

  • Peel stonefruits + tomatoes,

  • Finely dice onions

  • Segment citrus

  • Make a proper egg custard/crème anglaise

  • Season food appropriately (When, why and how), and also

  • Sharpen and maintain knives
