Have you always wanted to make your own salami, but don't know where to start?
In this session Dave will take you through the basics of making and curing your own salami at home, covering selecting the right cuts of meat and fat, choosing the right casings, mincing, seasoning and filling.
Get some hands on salami making experience as we go through the process of making Calabrese style Salami at home. Dave will guide you through choosing the right cuts of pork and fat, seasoning and salting and selecting the casings and the right curing environment.
You'll each get to make your own salami to cure and enjoy. We'll cure the salami in our all-year-round Cleaver curing cabinet and you can pick it up to enjoy when it's ready.
